For the marinade you will need:

  • Approximately two cups of water (480 ml)
  • Three medium size cloves of garlic
  • Half a cup of extra virgin olive oil (120 ml)
  • One teaspoon of sea salt
  • Two to three tablespoons of yellow curry powder
  • One cup of soaked raw almonds (240 ml)
  • One quarter cup (60 ml) cilantro
  • One quarter cup (60 ml) parsely
  • Choose your favorite selection of veggies e.g. chick peas, kidney beans etc

1. Combine and blend the following – garlic, olive oil, water, sea salt and curry powder until nicely mixed and pour the marinade mix into a bowl.

2. Add the vegetables of your choice into the marinade mixture and leave for about 24 hours. Next step is to strain veggies whilst reserving the marinade.

3.Now make sure to pour the marinade back into the blender and add the almonds ensuring to blend the mixture thoroughly.

4. Finally add cilantro and parsley and blend at medium speed for about 20 seconds.

5. Serve over marinated veggies. If desired, adjust seasonings with additional curry or add cayenne pepper.

Enjoy 🙂
